Cheesemaking Workshop Coming to Manchester Nov. 5

ISU Extension and Outreach Clayton and Delaware County is partnering with the Iowa State University Dairy Team to offer a free, hands-on cheesemaking workshop on Thursday, Nov. 5, from 12:30 to 3 p.m. at the Delaware County Fairgrounds Community Center.

The workshop will introduce participants to the basics of making queso fresco, a fresh cheese that can be produced with simple ingredients and equipment. Participants will work in teams of four and will have the opportunity to season and take home approximately one-half pound of cheese. No previous cheesemaking experience is required.

The program is designed for individuals interested in learning more about dairy processing, including dairy producers, aspiring food entrepreneurs, and anyone curious about adding value to agricultural products through on-farm processing.

Leading the workshop is Sarah Canova, Business Manager of the ISU Creamery.  Sarah grew up on a farm in central Iowa where her family raises swine, sheep, and beef cattle. She achieved her B.S. in Food Science and MBA from Iowa State University in 2018. After graduation, she worked in the meat industry, before returning to Iowa State to help launch the Creamery in 2019, where she is now the Business Manager. When not at the Creamery, she enjoys time with family, working on her family farm, and gardening.

Through this workshop, participants will gain hands-on experience making fresh cheese while learning about dairy processing techniques and value-added opportunities within the dairy industry.

The workshop is offered at no cost through funding provided by a Sustainable Agriculture Research and Education (SARE) grant. As part of a broader effort led by the Iowa State University Dairy Team, the project seeks to increase access to dairy processing education and resources for small dairy farms, including traditionally underserved and underrepresented producers who may face barriers to entering value-added markets.

Advance registration is required by November 2nd. Space is limited to 20 participants.  To register or learn more, contact ISU Extension and Outreach Delaware County at 563-927-4201 or visit www.extension.iastate.edu/dairyteam/farm-processing
